A whole brisket loses weight before it ever reaches the smoker. We remove excess fat and shape the packer for an even cook. During the long smoke, more moisture and fat render away.

The result is approximately 7–8 lb of finished smoked brisket with the point and flat intact—not a 7 lb raw brisket. It arrives whole, giving you control over slicing, portions, and presentation.

We use the same patient process behind our weddings, corporate events, and catered meals. This is prepared barbecue from a working Alberta pit, not a factory product carrying a barbecue label.

How large is the finished brisket?

The finished whole brisket is approximately 7–8 lb. It often begins around 16 lb before trimming and smoking; fat, moisture, and trim are lost during preparation and the long cook.

Does the brisket arrive cooked?

Yes. It is fully cooked, vacuum sealed, frozen, and ready to reheat. You are not receiving raw beef.

When do Ontario brisket orders ship?

Frozen meat leaves Athabasca on planned Tuesdays. Checkout only offers services that meet our frozen-delivery timing standard.

How should I reheat a whole smoked brisket?
